This simple, classic tomato sauce lets the ingredients shine. With just a few ingredients, you can make a delicious homemade pasta sauce.
Ingredients (4 servings)
- 1 28-ounce can Gridelli Canned Tomatoes
- 2 cloves garlic
- Gridelli Olive Oil
- Gridelli Olio al Peperoncino
- 14 ounces spaghetti pasta
- Parmesan cheese
- Fresh basil
- Salt
Instructions
- Finely chop the garlic. Cook in olive oil over medium heat for a couple minutes until fragrant but not browned.
- Add the canned tomatoes, crushing them with your hands as you add them to the pan.
- Add a splash of water. Simmer for 30-40 minutes, stirring occasionally. Season with salt.
- In a pot, boil salted water and cook the spaghetti until al dente. Drain, reserving 1/2 cup pasta water.
- Add the cooked pasta to the tomato sauce along with the pasta water and lots of grated Parmesan. Toss well over heat until the water evaporates – this is an important step called mantecare.
- Transfer to a serving platter. Grate over more Parmesan, drizzle with chili oil and top with basil leaves.
